Ha Ha excellent Dunc - you must have gone to the Wee Jack school of direct talking. I remember you, the big guy, with a beard, who sat up the back.

We plan a range of beers - well 3 or 4 !! - from session bitter type to dark and strong and we will also try a pilsner/lager type continental style made the proper way - bottom fermented in the traditional way , but that type of beer takes a long time to mature properly - up to 4 weeks !! and need different fermenting vessels.

We're not going to try to claim "water from wells blessed by monks and ancient recipes found in caves" b0ll0cks - just good beer made from pure ingredients - water, malt, hops and yeast - nothing in there that should not be there. Good beer is produced by discipline, robust prodedures and meticulous hygiene - no magic spells or hocus-pocus!!. Woops I think I may have blown the marketing hype of a lot of small brewers - I'll be "black balled" from the gang now !!!

Maybe i should make my own marketing hype - Honest Jack's Pure Ales and no pish !!!
