I wonder if a partial earth on one of the sensors is making the ECU see a fault and go into Harley home mode. Fuel pump on the FI models often fails between 50k km onwards and gives similar symptoms but I can't see that being due to the water as the pump is encased in fuel and the cause is due to either contact wear or regulator failure.
