Simple job, simply take your rear wheel off, stick your new bearings in the freezer for an hour whilst you remove your old ones with a screwdriver and a mallet. Your new ones will drop in perfectly when cold. I would use lots of grease in there.

Put the bike on a one step stand, out with the front wheel, forks etc. There are sometimes some notches either side of the top & bottom races, so's to make them easier to knock out. The more difficult thing is to remove the old bottom bearings from the bottom of the steering stem. Then just reinstall the new ones.
    Took me 35 mins to do a set once...on a Suzuki GS550E.

It just makes it a bloody lot easier to get them to fit in nicely, basic physics says that metal shrinks in the cold, it saves messing around with mallets and blocks of wood

Wheel bearings replacement 10minute job once the wheel is out, remove the dust seals with a large screwdriver put a long drift through the wheel catch the inner race of the opposite bearing and hammer them out turn the wheel over doo the same thing, refitting them use a large socket and bang them in.

I do have the luxury of a slide hammer and bearing/ seal driver kit which does make it a little easier and faster but either way it's an easy job to do. Putting the bearings in a freezer will make very little difference as far as fitting them
